Mike Kelly owns HS Fishing: a traditional smoke house on Sutton Road in Great Yarmouth. He says a typical day involves: "anything from putting fish down, soaking it, then we go on to the riving, then hanging, then we switch over to packing. The actual process is continuous, because obviously the fish takes 5 days to smoke so we've always got fish in advance for packing".

He works up to between 60 to 70 hours a week. He employs three full time members of staff and one part-time member during the herring season, they all work together to wash, pack and smoke the fish. He mostly smokes mackerel and herring, which are imported from Norway by truck. 98% of his business is for export to the Mediterranean, some goes to London and there is a small local market.

He says he enjoys everything about the job and the whole process of smoking in a traditional way.

HS Fishing was opened during the Heritage Open Days in September 2010, did anyone go? I would have liked to have looked around, but the only tour was held when I was at work. Am I correct in thinking this is the new name for Henry Sutton's company? If so I would appreciate any more information on Mr Sutton if anyone can recommend any sites or books for further reading

My great-grandfather was Richard Sutton who owned a fleet of herring trawlers operating out of Great Yarmouth in I presume the late 1890s and early 1900s. I believe that his brother or cousin started the fish processing in Sutton Road- presumably named after him.

I read you page and comments about Suttons and fishing  with interest. My grand father was Thomas Andrew Sutton, fish auctioneer, and my father would speak about Sutton herring fleet. They lived in St Peter's Road and moved to Scarbourgh in 1939. Interested to get in touch with other Suttons, there were several brothers  and large family of my grandfather
